Usually leftovers from dinner the night before--pasta, beans, a veggie--or whatever I'm eating for lunch that day. I've even given him a quarter of an avocado sprinkled with a touch of chili powder in a pinch--he loves it! Sometimes if I don't have anything fast & easy, I'll give him cereal with fruit in it.
sautee 1/2 cup chopped onions in 2 T butter for 2-3 min. Add 8 oz chicken that has been cut into pieces and cook for 3-4 min. Add 1 can chicken stock, 2 sweet potatoes (peeled and chopped), and 1 apple (peeled, cored, and chopped). Bring to a boil, reduce heat and cover and simmer 15-20 minutes.
He also does ham and cheese roll ups (You can buy low sodium ham at the deli)
Sometimes we do cottage cheese with cut up fruit, a piece of toast, and some puffs..

black beans, lentils, grilled chicken, corn, cheese (feta, cheddar, mozarella), mac & cheese, low sodium turkey, avacado, whole wheat toast with hummus, mini bagel w/cream cheese, turkey meatballs, pasta pick-ups, fruit cup, sweet potato fries, peas, blueberries, kiwi, edamame, falafel...that's all I can think of at the moment!
