Mine is:
Stir Fry
Cut chicken breasts into bite sized strips/pieces.
Brown the chicken with teriyaki sauce. No oil needed. Stir frequently.
Add all the veggies you can fit into the pan. Add about a 1/4 cup water
Stir and cook until veggies are crunchy but cooked.
I use the Trader Joe's rice packets (in the frozen section) to add to the plate. They take 3 mins in the microwave.
Taaa daaaa! Damnit now I am hungry.

Grilled chicken and sweet rice.
I buy the pre-sliced chicken tenders from my local grocery store but you can cut up chicken breasts into strips if that's what you have. I like to use orange sauce [it's in the salad dressing aisle I can't remember the name though] and I marinate the chicken for 24 hours.
I grill the chicken on the grill, every time you flip it [you'll flip 2 or 3 times] I dip the chicken back into the sauce it marinated in. While your chicken is cooking I use minute rice then add about 1/2 cup of honey a spoonful of butter and a tablespoon of the orange sauce.
Put the chicken over the rice and it's a quick, yummy meal.
Hmmm... I'll bite. Easy Fajitas:
Cut chicken or flat steak into small, thin strips. Use some pre-packaged fajita seasoning to season the meat, and then cook in a skillet with a little oil. Add in cut up onions, tomatoes, and peppers of your choice. Sautee until veggies are heated through and soft. Microwave some soft tortillas and there you have it.
I don't generally make sides with this dinner since we often just load up on tacos, but a can of refried beans and a package of mexican rice would work well.
Pasta w/garlic, red chili flakes and olive oil...
Cook pasta (preferebly linguini).
In a pan gently heat olive oil with lots of chopped garlic and chili flakes, just until garlic is cooked, but not burned.
Toss with drained pasta and add lots of parm cheese!!!
Salsa chicken!
Take chicken tenderloins or breasts and put them in a pan. Cover with salsa, black beans, and corn. Simmer covered until cooked through. Serve on tortillas with lettuce, olives, sour cream and avocado. Delicious!

Here's another chicken recipe: Cook chicken and then cut it into bite size pieces. Prepare Cream of Chicken soup as directed on can. Mix the chicken and soup together and put in a baking dish. Lay Grand's bisquits on top. (Can't think of the actual name. I use the ones in the refrigerator section by the crescent rolls.) Bake until the bisquits are done. Sprinkle cheese on top and put back in until the cheese melts.
Italian Chicken
Boneless Skinless chicken breast (raw)
Cook in a pan with half a bottle of fat free italian salad dressing. (Med for 5 minutes. Cover and cook on low for 10 minutes)
Serve with rice (white or brown) and a green veggie (for color!)
We make this one too. It is delicious!
Broiled shrimp with rice and veggies
Season shrimp with Old Bay Seasoning and broil until shrimp is no longer translucent.
Steam up mixed veggies - I prefer frozen with sugar snap peas included.
Rice - Instant brown is healthier, but takes a little longer than white. I prefer the Minute Rice brand. Brown cooked from scratch takes 45 min if your interested (too long for me)

It is a huge amount of fruits and veggies. (We take a giant cooler to pick it up and still don't have enough room for everything.)
It forces you to get creative, and try new veggies. Also since there is so much fruit we use it for snacks and stuff. It makes us eat healthier.
