anyone have a good recipe for chicken & dumplings?

This is the craving of the week.  :-)  Does anyone have a good recipe that is fairly easy, or, even better, in the crock pot??  TIA!!

  • I don't make my chicken and dumplings in a crock pot, but my stove top version doesn't take all day to make so maybe it will work for you!  Also, I don't measure much, so you kind of have to work with your eyes and taste buds here. Smile

    Chop @ 2 cups each of carrots and celery.  Chop one small onion.  Melt 1/2 stick butter in a large pot, add celery, carrots and onion and saute with a bit of salt and pepper until barely soft.  Add chicken pieces (I like to use bone-in chicken, about 2 lbs. or so or meaty pieces) and cover with water.  I like to add a couple cubes of chicken bouillon and a bay leaf for flavor.  Bring pot to a boil and cook until chicken is done (about 20 minutes).  Remove chicken from pot and continue boiling veggies.  While chicken is cooling, make your dumplings.  The really simple way is to buy a can of biscuits, roll them out with a rolling pin and pull off small pieces and drop into boiling pot.  Here is a recipe if you would rather make them from scratch.  While your dumplings are boiling, pull chicken off the bone and stir back into the pot.  Remove the bay leaf before serving.... Enjoy!

  • I love the Paula Deen recipe--DH says its his favorite and he grew up on good ole Kentucky home cookin' lol--I use store bought tubes of biscuits b/c they taste just as good in this as making them homemade and its WAY less work

    Ingredients:

    -          2-3 chicken breasts cut into approx 8 pieces

    -          3 stalks of celery

    -          1 large onion chopped

    -          2 bay leaves

    -          2 chicken bullion cubes

    -           1 tsp. House seasoning (house seasoning is good to mix in advance and use when anything needs seasoning?mix together 1 cup salt, ? cup ground black pepper, ? cup garlic powder)

    -          1 can of cream of celery soup

    -          2 small tubes of crescent rolls

     

    Directions:

     

    1.         Put the raw chicken, celery, onion, bay leaves, bullion cubes and house seasoning in a large pot.

    2.         Add 2 qts of water and bring to a simmer over medium heat.

    3.         Simmer the chicken until tender.

    4.         Roll out your crescent rolls while soup is simmering, cut the dough into 1in. pieces, cut each 1in. strip in half, drop into simmering pot

    5.         DO NOT STIR THE CHICKEN ONCE THE DUMPLINGS HAVE BEEN ADDED

    6.         Gently move the pot in a circular motion so the dumplings become submerged and cook evenly

    7.         Cook until the dumplings float and are no long doughy (usually 4-5 mins).

    it is not a super easy recipe though but it really is the best ever.

  • Mine is simple, cook chicken either on the stove or in the pressure cooker or you could use crock pot too.

    Then I use Bisquick to make the dunmplings and they take 20 minutes to make.

    Sometimes I cheat and while cooking the chicken, I use store bought chicken stock to cook the dumplings in and then save the chicken stock I made while cooking the chicken to use for the next time. I even use just chicken breasts sometimes to make it even quicker.
