Veggie Mama's- Help me out please!

I've been seeing a lot of posts recently about people freezing meals ahead of time for after the LO comes home. Honestly, it never occurred to me to do this! Being vegetarian, I tend to cook fresh stuff every night and I don't think I've ever frozen a meal ahead of time. Does anyone have some good veggie meals/casseroles that I can freeze ahead of time? Thanks ladies!

  • Honestly I think quite a few things freeze well. Maybe try googling vegetables that don't do well when frozen and then try to avoid those?
  • warning...be careful of things in the broccoli family and other veggies that can cause gas bc LO will get it too Smile

    i froze a broccoli/cauliflower casserole that DH is enjoying without me, oops

  • Skinny B!tch In the Kitch has a great recipe for vegan lasagna - I bet it would be really good frozen.

    You can also adapt many other recipes.  I just posted some recipes on the August board https://community.thebump.com/cs/ks/forums/thread/39030146.aspx).  There's one for baked ziti- you can use those fake "meat" crumbles (Morningstar, BOCA, etc.) instead of beef, and then use veggie shreds instead of real cheese.  In place of the cottage cheese, you can make tofu ricotta - pulse tofu and EVOO in a food processor until it's the right consistency.  Use soy milk in place of real milk, and an egg substitute in place of eggs. 

    You can also use the chili recipe - just sub in the fake "meat" crumbles in place of beef and turkey.  Morningstar's website also has a ton of recipes - some might be good for freezing: https://www.morningstarfarms.com/recipe_search.aspx 

    You could also freeze breakfast foods (muffins, etc).

  • I'm not a vegetarian but I do make a lot of meat-free dishes.  Lasagna or baked ziti works well.  I think black bean enchiladas would be great too.

  • I made mac n cheese (I'm not a vegan, obviously), kale lasagnas, kale pies (using a David Lebovitz spinach pie recipe that had specific instructions for freezing), and some lentil soup.

     I use half black beans and half kidney beans, and I don't mash them (I just leave them whole).

    If you are vegan you can also obviously leave off the cheese (or use a soy cheese).
