I have a flank steak marinating in teriaki sauce. I'll throw that on the grill when I get home. Not sure about sides yet. Probably steamed brocolli and some kind of potatoes or rice.

You'd have to hit the grocery store, but what about a pasta like baked ziti, a big green salad and dinner rolls? Dessert is angel food cake with fresh strawberries and whipped cream (easy to make homemade if he has a mixer).
This is the recipe we use. We do flour tortillas instead of corn, and it still works perfectly if you don't like onion and skip it. (dh hates onions, le sigh) We don't drain the green chiles, it adds more flavor to make up for the lack of onion. The kids even eat it as long as we keep the hot sauce/jalepenos out of it so we add our own at the table. Super yum. Goes well w/white wine or beer, too lol
Made the PW's tequila lime chicken last night (sans tequila, even) and it was FABULOUS. Seriously. And very easy...and that's saying something, considering I burn rice.
Well, we are having sausage and pancakes since we are out of frozen pancakes and I need to get a stock again since Cohen loves them. That is simple, but definitely not amazing!

Totally not amazing, but simple.....breakfast burritos (sausage/potato/chz/egg) and fresh strawberries.
Pasta with a great jarred sauce and garlic bread is simple.
