NBR: Mahi Mahi recipes

DH bought some frozen mahi mahi fillets at Costco.  I don't eat seafood, so I'm at a loss as to what to do with them.  Any ideas on something simple I could do with his fillets while I cook myself a piece of chicken?

  • My favorite way to eat Mahi Mahi is blackened.  You could buy a pre-made blackened seasoning, sprinkle on the fish and back it.  Or you could probably do the same with any other seasoning he likes. 

    And mahi might be a good fish to do tacos with.  It could be seasoned and grilled for soft shell tacos.

    I made fish tacos last monday....sooooo good! I think I used halibut, but I think any mild fish would work just fine. :o)

    Or fish sandwiches. Monica has a good recipe in her blog. My family loves those.
