So, DH's brother and sister in law are here from Ukraine and I suck at making salad because I hate it.
SIL is a little skinny thing and they don't eat much meat and/or fried foods in Ukraine so I need some good salad or side dish ideas that don't involve potatoes/heavy ingredients. I don't want to overwhelm their systems tonight with steaks AND baked potatoes and other heavy stuff.
Anyone have any good ideas? I am a terrible cook and I'd love to hear any suggestions you guys might have!

Re: Help! I need some salad recipes
I love mixed greens with some goat cheese and pickled beets. It's so tasty.
How about a simple greek salad? Cucumbers, tomatoes, olives, feta cheese, and a zesty greek dressing?

Our fave summer salad is super easy! It's just chopped spinach (and if you want to put in other lettuce you could), strawberries, and feta cheese crumbles. It's amazing!!!
I also really like a fruit salad my g-ma used to make that is just Cool Whip, chopped grapes, and finely diced (in the blender) cranberries. She called it pink fluff - I call it heaven.
Either way, you can't mess these up. 3 ingredients each and no cooking required!
this one's really good if you have a few mins. You could always grill some chicken on the side for the "real" eaters!!! And some garlic bread. YUM!

If you want something quicker, one of my favorites is romaine lettuce (you can get the bagged one that's already cut) with some raspberry vinaigrette dressing, some fresh raspberries and almonds. YUM! I always serve that with my chicken parm.

Oh, another side that is one of my faves with steak is grilled corn on the cob - soak in water for about 20 mins, peel the husk back, coat with olive oil, add some fresh garlic and salt and pepper. Put the husks back on, and throw on teh grill for about 20-30 minutes.
ETA: Remove the corn silk, obviously.
Another easy one is grilled asparagus (or roast in the oven) - just brush on olive oil or butter, salt/pepper/garlic. I also serve thick tomato slices and sauteed mushrooms with steak. YUM!
sauteed mushrooms - wash them, heat olive oil in skillet, add mushrooms and cook on high for about 5 minutes. Add a tiny bit of butter, some garlic, and Worcestershire sauce (about 12 shakes) and cook med-high until carmelized. my fave side dish!!!
ETA: I use white button mushrooms (2 8oz pkg for 4 ppl) but the baby portabellas have more flavor. i get what's on sale.
