It's been a long journey. TTC since 9/06. multiple IUI's and IVF's and 4 m/c's. IVF#3 = BFP, twins, induced at 34w6d due to baby b passing away (no explanation). Delivered on 35w1d, Baby A - baby girl, and Baby B - baby boy, our little angel.

Re: what's fav. one-pot dinner recipe?
I love fried rice and that only uses one pan. I use a couple different recipes depending on what I feel like.
I also love to make this chicken tortellini soup...you just poach a chicken breast, shred it, saute some garlic in some EVOO, add 4 cups of chicken broth to the pan, put the chicken back in, let it simmer for awhile, then add in fresh cheese tortellini and cook the pasta per the directions. At the end add in some baby spinach. So, so good! --Not always ideal for summer but it is delicious.
Or, you could do what I'm doing for dinner, which is boiling up some pasta and adding in garlic, butter and parmesan :P

crock pot ranch chicken
1 lbs of chicken breast (or strips) boneless, skinless
1 packet of dry ranch mix
0.5 c of fave marinade (i used one from whole foods)
0.5 c of water
cook 6-8 hrs on high
so good!!!
This may not sound amazing but I promise you it is, it's a must try!
In a crockpot place approx. 4 boneless skinless chicken breasts
Cover the chicken breasts with as many slices of swiss cheese as needed to cover all the chicken
On top of the cheese place a can of mushroom soup
On top of the soup sprinkle a box of Stove Top stuffing all over
On top of the stove top, drizzle 2-3 tablespoons of melted butter all over
Cover and crock pot on high (about 4 hours) or low for 6-8 (I always use a thermometer to check temperature and if you but it on low all day while at work for 10 hours, it's always plenty done)! Actually, I'm quite sure this could be baked too, I've just never tried it and I tend to over cook chicken if I don't do it in the crockpot)

I'm making Stromboli tonight, and it's a one disher... but I got mad while making it, so I'm not sure I'd consider it a "fav."
I make this all the time. I have always baked it, but I am going to try it in the crockpot next time. Even easier!
