I am finally back into making (and sticking to) a menu this week!

Tonight: Calzones w/Marinara
Tuesday: Broiled Parmesan Tilapia, Brown Rice, veggie
Wednesday: Foil Packet Italian Chicken
Thursday: Red Beans and Rice

The next three weeks at my house are going to be very crazy. All I know for sure for this week is:
breakfast (scrambled eggs, sausage, biscuits and gravy)
hamburgers and some kind of side besides fries
Yeah the rest of the time I'll probably wing it with a quickie meal from the freezer.
Last night: Smothered porkchops, collard greens & garlic mashed potatoes
Tonight: Left overs probably
Tuesday: Turkey sloppy joes and some kind of side other than fries (like Candi)
Wednesday: Chicken marsala...does anyone have a good recipe???
Thursday: Zatarran's jambalaya with andouille sausage & shrimp
Last night: Rotisserie Chicken, Mac-n-Cz & Peas (quick meal!)
Tonight: King Ranch Casserole
Tuesday: Steaks, sides???
Wednesday: Tacos
Thursday: Chicken Cordon Blu, mashed potatoes, basil corn, green beans
Friday: Stouffer's Lasagna

2 Tilapia filets (I use frozen)
1/4 c. grated parmesan cheese
1 tbsp. Hellmann's light mayo
1 tbsp. Country Crock light spread/butter substitute
1 tbsp. lemon juice
1/2 tsp. basil
1 tsp. black pepper
1/2 tsp. salt
Combine parmesan cheese, mayo, spread, lemon juice, basil, pepper, and salt in small bowl.
Place tilapia on a foil-lined pan, sprayed with nonstick cooking spray or olive oil. Broil tilapia at 400 for 2-3 minutes. Flip fish, broil another 2-3 minutes. Spoon the parmesan mixture over the fish, and broil for another 2-3 minutes.
Turn the broiler up to high for the last minute to get a nice brown toast on the parmesan sauce.
I like to make whole wheat rotini pasta and mix up a little extra of the sauce to mix with it.

-Wednesday: Baked chicken (covered in crumbled Ritz, garlic & parmesan cheese) and mashed potatoes
-Thursday: Don't know...we'll be packing for vacation, so probably something quick...or leftovers.
-Friday: We'll be in Savannah!
I have a freezer full of great meals from my freezer party Saturday night, so we will have a couple of those. I actually won't be cooking at all this week b/c I'm also going out a couple of nights!

We did cook last night though and it was yummy. We had grilled pork tenderloin, wild rice and grilled asparagus w/parmesean.
