Poppy Seed Chicken
4-5 Ck breasts
8 oz sour cream
1-2 TB poppy seeds
Can cream of ck
Ritz Crackers
2 TB melted butter
Cook ck breasts. Cool and then cut up/shred. Combine ck, sour cream, poppy seeds, and cream of ck. Put in casserole dish. Crush up crackers and put on top. Pour butter over. Cook @ 350 for 25-30 mins.

I tried this last week and it was AMAZING. It's a very summery dish. MMM. I served it with sauteed garlic spinach.
Balsamic Chicken with Goat Cheese
Prep time: 5 minutes Cook time: 15 minutes
4 boneless, skinless chicken breasts
coarse salt and freshly ground pepper, to taste
1 tablespoon olive oil
1 cup grape tomatoes, halved
1 teaspoon garlic, minced
1 2.25-ounce can sliced black olives, drained
1/3 cup prepared balsamic vinaigrette dressing
3 tablespoons crumbled goat cheese
1/4 cup fresh basil, torn
1 whole lemon(s), cut into wedges
per serving: 278calories; 41 grams protein; 11 grams total fat; 1 gram fiber; 3 grams saturated fat; 2 grams carbohydrates; 105 mgs cholesterol; 136 mgs sodium; 6 weight watcher points
[1] Sprinkle chicken evenly with salt and pepper.
[2] Heat oil in a large nonstick skillet over medium-high heat. Cook chicken 6 to 7 minutes on each side or until done. Transfer chicken to a serving platter; keep warm.
[3] While chicken cooks, combine tomatoes, garlic, olives, and vinaigrette in a medium bowl.
[4] Add tomato mixture to pan; cook 1 to 2 minutes or until tomatoes soften. Spoon over chicken. Top evenly with cheese and basil. Serve with lemon wedges.
Ingredients
- 1 medium onion, chopped
- 6 cloves garlic, chopped
- 1 jalapeno, chopped *make sure to wear gloves!
- 1 tablespoon garam masala
- 1/2 teaspoon ground cumin
- 2 to 4 cloves
- 2 tablespoons vegetable
oil
- 2 tablespoons curry powder
- 1/14 cup water

- 1 chicken, cut into 8 pieces *I use cut-up boneless, skinless breasts
- 4 medium potatoes
, peeled and diced *to save time, I use fingerling potatoes, cut in half
- Kosher salt
- Steamed white rice

DirectionsIn a food processor combine the onion, garlic, jalapeno, garam masala, cumin, and cloves. Process to make a chunky paste.
Heat the oil in a large Dutch oven over medium heat. Add the onion mixture, curry powder, and 1/4 cup water. Let fry 4 to 5 minutes.
Add chicken pieces, potatoes, and salt to taste. Add water to cover, up to 3 cups, and bring to a boil. Simmer until the chicken and potatoes are cooked through, about 30 minutes. Serve over rice.
Beef Taco Bake
1lb of ground beef
1 can of condensed tomato soup
1 cup of salsa
1/2 cup of Milk
2 cups of shredded cheese
Brown Beef and drain, add soup, salsa, milk and half the cheese. Spoon into a baking dish and cover. Bake for 400 degrees for 30 minutes. Sprinkle with remaining cheese.
I pair this with tortilla chips and black beans.
Also I make this ahead; I brown the beef and add the ingredients into a baking dish the dish or two before then just pop it in the oven for dinner.
One more. I am IN LOVE with my mini 4-cup food chopper/processor. Small, doesn't take up counter space and easy to clean. I regularly puree veggies to add to sauces but the best thing is that it makes great quick soft-serve ice cream and smoothies for the kids. They love helping.
I freeze banana chunks (don't throw those bananas away!) and keep frozen berries/peaches on hand.
Throw some frozen fruit in the processor with a little yogurt or a touch of milk. Not too much if you want soft-serve. Add honey or Agave to taste. Push the button. I cover the top with a paper towel - it is a bit rough for the first few seconds because of the frozen fruit. But keep going.
Healthy ice cream for the kids any time. The Sneaky Chef adds cocoa powder to bananas to make chocolate ice cream. I find that using yogurt with chocolate makes it a bit tart vs. just using milk.

Cream Cheese and Jalapeno Stuffed Hamburgers:
1 package hamburger meat
1 package cream cheese
1 jalapeno (chopped finely) **I used a lot more than one, but DH likes things extra spicy
seasonings ** optional
Directions:
In a small bowl, cream together the cream cheese and chopped jalapeno.
Make the hamburger patties like you normally do, but press them to 1/4" thick.
Spread a layer of the cream cheese mixture on one of the patties. Top it with another patty, and press the sides together to form a seal.
When you grill them, it may take a little longer before they're done because of the filling.
**I used 2 packages of cream chese and it was way too much-the burgers were stuffed, and I had tons left over. For extra spicyness, add pepper jack cheese on top
We have 2 easy meals this week.
#1 - some kind of chicken enchilada casserole
A couple of weeks ago, we slow cooked some chicken with canned tomatoes and chilis, and half of it's still in the freezer. We'll use that, shredded, and layer with tortillas, enchilada sauce, and cheese.
#2 - jambalaya and zucchini chips
We use Zattaran's jambalaya, made with local sausage. We haven't done the zucchini chips yet, but this recipe looks good. I think I'll add some garlic to the breadcrumb mixture:

All my meals this week are just Meat, Potatos, Veggies because I'm trying to clean out the freezer/pantry so I didn't get creative. So I'll post something I WANT to make that looks easy.
Hawaiian Pita Pizzas Recipe (I'm sure any kind of pizza would work)
Ingredients:
pita bread (I like whole-wheat)
pizza sauce
Canadian bacon (or slices of ham), diced
pineapple, diced
mozzarella cheese
Method:
Preheat oven to 425 degrees.
Spread a few tablespoons of pizza sauce atop a piece of pita bread. Then layer with Canadian bacon and diced pineapple. Sprinkle cheese on top, then add a few more pieces of Canadian bacon and pineapple.
Place on a cookie sheet (or directly on the oven shelves) and bake for 8-10 minutes, or until cheese is melted and pita reaches desired level of crispness. Remove and use a pizza cutter (or a sharp knife) to cut into slices, and serve immediately. Also probably small enough for toaster oven although I don't have one.
yes I did-i also added jalapeno seasoning to the cream cheese mixture and right on top of the burgers before I grilled them. They were so easy and DH is requesting them again, so I think they were a hit!
My dh actually made this since he was home before me. It is WAY easy!!!! And, it is tasty.
Baked enchiladas/taquitos/chimichangas
Amount Measure Ingredient -- Preparation Method

4 Frozen enchiladas/taquitos/chimichangas
1 can enchilada sauce
1 can Turkey chili (no bean)
Mexican Shredded Cheese
1. Spray baking dish with no-stick spray
2. Place enchiladas/taquitos/chimichangas in dish
3. Pour can of enchilada sauce over enchiladas/taquitos/chimichangas
4. Pour can of chili over that
5. Sprinkle shredded cheese (Mexican is what I usually use here).
6. Bake in oven at temp and time provided on
enchiladas/taquitos/chimichangas pkg. The taquitos only take about 15-20
minutes and the enchiladas/chimichangas usually take longer (anywhere from
30-50). It is so easy to throw together. I use turkey chili (no bean) to
reduce the cals and fat. Serve and top with sour cream and/or guacamole.
7. Serve spanish rice.
We had Zataran's jambalaya last night. We bought a rotisserie chicken and shredded it to put in the rice - sooo easy & good!
