This is such a simple thing - and it gives just a tad extra flavor. I"m sure there is more you could do to it but I just made this up on the fly one day.
Pour one can of Coconut Milk (I use low fat) into a 4 cup measuring cup. Add water to make the total liquid count 3 cups. Pour into sauce pan and heat until gently boiling.
Add 1 1/2 cups of white long grain rice (Basmati might also work too - I think Jasmine Rice would get too mushy). Stir, cover and simmer for ~20 minutes until done.
Voila! Coconut Rice
(for mom's with babies eating solid foods - this is a GREAT food for them - the coconut milk has some great fats and flavor).
I serve it with Tilapia packets or like last night - Asian Beef was really great with it too.
