Twice this week we put a whole chicken into the crockpot. DH did it by putting in the chicken, some onion, some carrots and then filling it to the brim with water. The point of this being boiled chicken for taco-meat.
I prefer, and think it's easier, to just plop the chicken into the crock pot, toss in half a cup of water or so and then salt/pepper. This week I did it with a packet of dry Italian Dressing mix. The first night we had just...chicken - Pieces of breast along with rice and broccoli, as sides. Then I got all the chicken off the bones, shredded it and we used it again last night for chicken tacos. I have some leftover and plan to use it for chicken salad today for lunch, either in a wrap or on a sandwich - Not sure.
Would love to hear other crockpot ideas. I LOVE being able to fill the crockpot up the night before, after DS has gone to bed and then just plug 'er in in the morning.
