These were in my produce box this week, and I have no clue what to do with them. I'm kind of afraid of them, since I know they "bleed" and can be messy!
Roast them in the oven- DELICIOUS. Recipe from my mom's friend (these were relatively large beets- the slices were the size of your palm):
I peel the
beets and then place on a baking sheet and drizzle olive oil on them. Bake
until done in the oven @350 degrees. It depends on how big the beets
are as to how long it takes to get them done. In this case, it took
about 1 hour and 20
minutes. After I cooked them, I drizzled balsamic vinegar on
them. Salt and pepper.
I don't have an official recipe, but I went to a restaurant that added a beet to their mashed potatoes. I would assume they just cooked them and mashed up together. Gave them a neat taste and they were purple!

I roast them in the oven as well whole, peel, chop, and then mix in some goat cheese. Delicious! Also - I alsways found them hard to peel, so I cut off the tops, pierce the skin and roast - then the skin will just peel off. They definitely are messy, but so worth it - IMO.
