I would go on allrecipes. I do a variation of one I found on there. Some frozen chicken breasts, Sweet Baby Ray's BBQ sauce, some Italian dressing, a little Worcestershire, brown sugar (if your BBQ sauce isn't already sweet like SBR). Cook; pull chicken. Now you have BBQ chicken for sandwiches, BBQ chicken pizza, etc.
Frozen chicken breasts, 1 1/2 cups of salsa, can of black beans and can of corn. Cook all day and serve on its own or with corn tortillas. Yum and sooooo easy!
The night before put your favorite dry rub on a whole chicken (about 4 lbs) and let it sit in the fridge over night (I like a spicy rub). Chop up an onion and drop it in your crock pot. Then put the chicken on top of the onion. Cook on low for 5-8 hrs depending on your crock pot. It makes a perfect "roasted" chicken and left overs make great chicken salad.
I really like the salsa chicken. Frozen chicken breasts, 1 can cambells cheddar soup, taco seasoning packet, 1 jar salsa. cook for 6 hours. I then serve it with whole wheat tortillas, chopped green onions, chopped avocado and chopped tomato and lettuce.
- Seasoned Tortillas Strips (I've found these at Kroger hanging above the lettuce displays)
Heat up chili. Layer lettuce, tortilla strips, chili, cheese, ranch & salsa on a plate or in a bowl. Toss and eat! You can mix the ranch & salsa together separately to make the salad dressing but it's just as easy to mix it up on the salad.
DH and kids love this salad!! We used to make this exact salad when I worked at Logan's Roadhouse through college and they stopped selling it. It's so easy, quick and no real cooking. We use to fat free or reduced fat cheese and ranch to help keep it light too.
Flip it over. Fill four whole green chilies with cream cheese, line 'em up down the middle of the flank steak. Roll the steak into a tube around the chilies. Tie with cooking string.
Put it in the crock pot with 2 cups of salsa verde poured over the top. Turn it on low for 6-8 hours. Done. Yum.
Serve with quick cooking couscous and a bag of steamfresh broccoli. Dinner is made in 10 minutes of getting home and healthy.
Put a pork shoulder or butt roast in the crock pot. Empty a bottle of Liquid Smoke on top of it. Add enough water so that it fills halfway on the roast. Cook on low for 12 hours.
At 12 hours, shred the roast apart. Add add'l water if needed. Cook an add'l 4-12 hours (depending on size of the roast).
It takes a long time to cook, I recommend 16-24 hrs total, but it's yummy & super-easy.
1 lb ground beef, 1/3 cup rice, 1/2 cup chopped onion, 1/2 cup water, 1 cup ketchup. Combine, stuff in peppers. Cover peppers with another 1/2 cup water and 1 cup ketcup mixture. Cooke on low for 8 hours. Yum Yum!
3-4 lb beef brisket(if you have Costco membership-they have good deal on pk of 2. Then you have one for later as well)
pkg dry onion soup mix
can beef broth
french bread
cheese of your choice
Put brisket in crockpot. Mix broth and soup mix. Pour over. Cook on low 8-10 hrs. Slice across grain. Toast bread in oven for few mins. Add meat and cheese. Dip in juice. YUMMY YUMMY! Always makes 2 meals for us! Serve with fries, chips, slaw, potato salad, etc.
Don't know about this but what if we have a weekly post where people can post 1 recipe they are cooking for the week that's easy??? Just a thought.
I love this idea. I am going back to work soon and have been doing my best to organize. I have a program that I use that I am trying to enter my recipes in along with "planning" using a calendar. It also shoots me a shopping list of items.
Slow Cooker Beef Stroganoff
Recipe By : Lipton Serving Size : 6 Preparation Time: 0:10 Categories : Main Dish Meat
1. In slow cooker, toss beef with flour. Stir in remaining ingredients except sour cream. Cook covered on LOW 8 to 10 hours or HIGH 4 to 6 hours until meat is tender.
2. Stir in sour cream. Serve, if desired, over hot cooked noodles.
I'd been wanting to try this recipe for a while - and I finally did last night. Super easy - the longest part was browning the beef!
Beef, bean and bacon turnovers
1/2 lb ground beef Can of Campbells bean and bacon soup 1 cup cubed potato (we had a left over baked potato that I used) Barbeque sauce (I just added this for more moisture) 1 can Pillsbury crescent rolls
Brown beef and add soup, potato and sauce. Unroll dough into 4 rectangles (mine were the grand crescents so I only had enough for 3. Pat dough to seal perforations. Spoon mixture onto one side of the rectangle and fold over. (I underestimated how much I could get in there - you can stuff them pretty full). Bake at 375 for 13-19 mins.
You really could put any filling in them, and DH added cheese to his (I am off dairy at the moment). It was quick and easy, and not much to clean up afterwards (this part is my favourite!)
3-4 lb beef brisket(if you have Costco membership-they have good deal on pk of 2. Then you have one for later as well)
pkg dry onion soup mix
can beef broth
french bread
cheese of your choice
Put brisket in crockpot. Mix broth and soup mix. Pour over. Cook on low 8-10 hrs. Slice across grain. Toast bread in oven for few mins. Add meat and cheese. Dip in juice. YUMMY YUMMY!
I was going to suggest this, it's even better if you cook it with a can of beer. And any roast works, brisket can get expensive.

Southwest Tortilla Chili Salads
- Chili (we like Hormel's Turkey Chili in a can)
- Shredded Cheese
- Ranch
- Salsa
- Lettuce, I prefer regular iceburg for this

Heat up chili. Layer lettuce, tortilla strips, chili, cheese, ranch & salsa on a plate or in a bowl. Toss and eat! You can mix the ranch & salsa together separately to make the salad dressing but it's just as easy to mix it up on the salad.
