we're growing lot of spinach in our garden because it's one of our top vedgies, I eat a spinach salad every day, and it's super healthy for we preggo gals. however my plants are growing so fast I have more than I can eat in salads LOL so I was wondering if anyone has any good recipes to share, I've found alot of pasta and potatoe mixes but we eat low carb since i'm diabetic. I'm gona try a soufle but i'd like any options anyone can share

This is one of my favorite recipes. I don't miss the crust at all! Plus the ingredients you need (cheeses, evap milk) make at least two so we freeze one.
