s/o dinner - crockpot recipes?

Can you share some super easy and delicious crockpot recipes?  I've been far too tired to cook dinner at night and think the crockpot could be my savior.  We don't eat seafood but love veggies, chicken, and beef.

  • This is a delicious slowcooker pork roast with a sweet and lightly spiced glaze. Serve this pork loinroast with mashed potatoes and your favorite side dish vegetables.

    Cook Time: 9 hours

    Ingredients:

    ?        1 boneless pork loin roast, 4 to 6 pounds

    ?        1 clove garlic, halved

    ?        salt and pepper

    ?        1 1/3 cups brown sugar, divided

    ?        1 tablespoon Dijon mustard

    ?        1 tablespoon balsamic vinegar

    ?        1/4 teaspoon cinnamon

    Preparation:

    Washpork roast, trim excess fat, pat dry, and rub with garlic halves. Sprinkle withsalt and pepper, then prick the roast all over with a fork or skewer.

    In a cup or bowl, combine 1 cup of the brownsugar, the mustard, and vinegar. Rub all over the roast.

    Cover and cook on LOW for 7 to 9 hours. Pouroff the excess juices.

    combinethe remaining 1/3 cup brown sugar with cinnamon; Spread the mixture over thetop of the roast. Cover and continue cooking on LOW for 1 hour longer.

     

    I used carrots and then added apples and sweet potatoes on top- soooo goood!  Keep an eye on the broth though, I added some chicken broth because the liquid wasn't enough :)

  • Chicken and dumplings:  warning, I am a highly inexact cook

    • 6-8 chicken thighs and/or legs
    • 6 stewing onions peeled with about 2-3 whole cloves stuck in each one.  1 onion per serving of chicken works well.
    • Some carrots (maybe 2c or so chopped)
    • Some celery (maybe 3-5 stalks cut up)
    • Some green peas (1/2 to 1 freezer bag of them)
    • 2 bay leaves
    • Either a little poultry seasoning, bouquet garni, Scarborough Fair (parsley sage, rosemary thyme), tarragon, whatever you think would go good + salt and pepper as desired.
    • 1/2 c. white wine
    • Chicken broth to fill up about the pot about 1/2 to 2/3 of the way up the pot.

    Let it go on low about 8 hrs or so.  Once done, add 1 container sour cream and mix in.  Then add dumplings.

    For dumplings...

    Google a good scratch recipe for drop biscuits (sorry, I'm just Southern to feel that storebough or bisquick biscuits don't cut the mustard) Make 1 recipe, add some herbs (fresh or dry) to the biscuit dough.  Drop spoonwise on top of the crockpot chicken (don't sink 'em), put the lid back on, let it go on high for maybe 15-20 minutes or until the top of the biscuits look relatively cooked (dry and set, but not really browned).  If scratch isn't your bag, just chuck in some premade biscuits, cover and cook until the tops look done.

  • Ok.. Super easy... (I apologize b/c I'm on my iPhone and it's gonna be all in one paragraph) Crock pot chicken: can of cream of chicken, can of cream of onion (or mushroom), can of chicken broth, cut up a whole (I actually us a half) an onion, chicken breasts. Let it it cook all day, and I serve it over rice and with some kind of steamed veggies. Too easy! And good too! Edit** pepper and salt to taste

  • If you're into soup during the summer, here's one for taco soup:

    Browned ground meat
    1 can corn
    1 can black beans
    1 can red kidney beans
    1 can rotel
    1 packet taco seasoning
    1 packet ranch dressing mix

    Just throw it in the pot and let it simmer!

    Roast:

    any kind of roast you like
    carrots
    potatoes
    2 packets lipton beefy onion soup mix
    water to fill

    this one takes a while, we usually start at night on low and let it go through mid afternoon the next day.  add the carrots the next morning if you start overnight.

    We do this with chicken and add some sour cream toward the end of the cooking time!  Yummy!

    Oh I bet the sour cream makes it soooo good! I was sharing this recipe with my brother today and my mouth started watering talking about it!

  • It's a bit hot for chili now, but I make this almost weekly all winter long... it's a favorite!!!

    Chili recipe:

    -1 Lb of ground beef or turkey

    -1 lg or 2 sm green peppers
    -1 softball sized white/yellow onion
    -1 29 oz can of tomato sauce

    -1 29 oz can of diced tomatoes

    -1 can tomato paste
    -1 lg can of kidney beans

    -1 small can pinto beans

    - salt and pepper to taste
    -1 packet of taco seasoning (to mix into ground meat after it's cooked)
    -1 tblsp. of ground cumin
    -1 teaspoon of ground coriander** optional
    -2+ tblspn of chili powder (I add more)

    -a few splashes of hot sauce


    Recipe:

    Brown ground meat in a large skillet.  After the meat is brown add the packet of taco seasoning to it and mix.

    Pour meat into crockpot.  Add your tomato sauce and paste, beans, onions, peppers, beans, and stir.

    Add your seasonings, and hot sauce, maybe two splashes.

    Let the chili cook for 6-8 hours on low.
