When company stops by unexpectedly and stays for dinner what do you serve? I'm trying to build my pantry/freezer for on-hand items to make meals with. What do you always have on hand to make for emergencies? TIA
We always keep a pound or two of ground meat in the freezer and a taco kit on hand. All you need is some cheese and sour cream. Add in some chips and salsa and margaritas and you've got a nice little party.

Some sort of casserole or pasta. I always keep spaghetti/lasagna noodles, red sauce, and ground hamburger on-hand. Or I'll make a white alfredo sauce pasta with chicken. Casseroles are super easy and make lots too.
Also check your grocery stores spice aisle. McCormick has these great recipe cards that come with all spices you'll need. They're $1.99 and my favorites are Apple & Sage Pork Chops and Quesadilla Casserole.
always have cans of diced tomatoes and pasta and frozen veggies...
Then you can easily throw together a dinner by saute any type of meat with some olive oil, garlic and basil, salt pepper, add a can or 2 of tomatoes to simmer for 5 min, add any veggie on hand [spinach and artichokes are always in my freezer] and top with some cheese if you like... serve over pasta and voila!
We call it refrigerator pasta. I just always make sure to have pasta, fresh garlic, olive oil and a block of Parmesan in the fridge. We go to our farmer's market every weekend so there's always veggies in the fridge and there's usually some kind of meat in the freezer. So as long as we have pasta and Parm, we have the makings for fridge pasta. Last time we made it I used chicken cut into bite sized chunks, zucchini and mushrooms. Delicious! And since it doesn't have a recipe, people think you're a genius cook that just "whipped" something up for them.
Unexpected company? We are going out to dinner or ordering in. I cook, a lot, but I only manage to do it by lots of advance planning. I'm not one of those people to whip things up.

Roast, potatoes. Or speghetti. but we always have hamburger, so with summer coming that is my go to summer meal!
