Introduce me to canning...

I pretty much know nothing.  Is there a way to can that I don't need to go buy lots of extra STUFF?  (other than jars and lids of course)  I'd love to jump onto the canning bandwagon, but DH will kill me if I tell him I need to spend more money...

  • OK... I read the entire blog... I still don't know if I need anything besides jars, lids and rings though...

    (Although, DH is already unhappy, because while reading I realized, "HEY!  We can grow green beans in a planter on our deck... Let's DO it!"  And he rolled his eyes... and said, "Greaaaaaaaaaat")

    The full supply list is currently in process w/ pictures.  I'm double checking some research on pressure canner weights and FDA recs for guage inspections.'

  • I love your canning blog, Jenn.  I'm going to attempt it for the first time this summer so I'm stocking up on supplies as I come across them.

  • I used a big stock pot/ soup pot that I already had as a water bath canner- I found a pizza grate thingy to use as a rack, or you can use a small round cooling rack set on top of some rings in the bottom of your pot.  Honestly, finding something to use as a rack was the most annoying part.  I didn't have a big enough stove burner to use a real canner, so I had to use a regular pot.  You just can't can large jars in it, since you have to have something like two inches of water over the lids of the jars.  I got my instructions in Putting Food By, which is definitely worth a small investment for peace of mind for the paranoid canner :)

    ditto this.  i used a large stock pot and put cotton washcloths in the bottom to keep the jars off the very bottom of the pot.  i could only do pints this way but it was a nice way to try it out before plunging in to new/big/expensive equipment.

    You can also throw a bunch of butter knives in the bottom of the pot all criss crossed on each other but man that washcloth thing is a way better idea!
