What to do with Shredded Chicken?

I boiled a couple of chickens and we have a ton of shredded chicken - Had tacos last night.  What to use it for tonight?  Any ideas?

  • Buffalo chicken sandwiches? That is a a favorite around here. Just mix in some wing sauce and ranch.
  • Chicken enchiladas
  • Go to the store and pick up 1-2 cans of chipotle sauce (not the peppers, just the sauce).  San Marcos is the best (blue can).  Anyhow, mix that in with 1 to 1 1/2 pounds chicken & serve over tostada shells spread with sour cream or lime mayo (my fave).  SUPER good.  Everybody that ever tries this loves it.  Maybe make some Goya yellow rice to go with?
  • Add BBQ sauce and have BBQ sandwiches!

  • Chicken Tortilla Soup? 

    Chicken Pot Pie?

     

  • If you don't want to do mexican again, I'd probably do either chicken pot pie, chicken noodle soup, or some kind of casserole (chicken, noodles, cream something, veggies and cheese).

    I put a couple of chicken breasts (typically 1 1/2 - 2 pounds at a time) in the crockpot with 1 cup of chicken stock (ie:  1 bouillon cube mixed with hot water) and cook on low until it's done.  Unless it's frozen to begin with then I start on high for an hour or so to get it started.  This is, in my opinion, the best way to get chicken ready to shred because it results in super tender chicken.  Otherwise it's just a PITA.

    If you use a crock pot liner, its super easy clean up too!  

  • I had two whole fryers I wanted to do so I did one in the crock pot (which I prefer) with water, a chopped onion and chopped carrots, salt and peppers and one on the stove.  Just boil until cooked through and falling off the bone. Easy!  And cheap!

    I do this and cook it on low overnight. In the morning it shreds like magic!

  • Buffalo Chicken Dip!

    It's sooo good and easy to make. The only thing I do differently is instead of bleu cheese, I use ranch dressing. I find the flavor milder and doesn't mask the hot sauce. I serve with pita chips, and tortilla chips.  You could even serve it with some veggies like celery, snap peas, grape tomatoes. Yum!
