So, I decided to make some chorizo and rice for DH. I already ate cookies for dinner.
I got the rice going and took the chorizo out of the fridge and it's like a tube of loose sausage. WTH? I thought it was like a Mexican hot dog? So gross, I had to squeeze it out of the casing - ew! Do people really eat it like this or did I get a weird brand?

Yah - it was nasty! I called DH and he said aren't you supposed to cook it in the casing? That's not what the directions said and it was a plastic casing with metal clips on the end.
Ughh- metal clips...I can't!
Weird. The Chorizo DH gets is usually a fully cooked hard sausage.
We had a fail two weeks ago - went to the store, bought it and some other stuff. Got home, couldn't find it - we both swear we saw it here, but never found it. I'm kinda scared to see what happens if it is somewhere in the house.

If it's in a kinda paper casing then, yep! you got the right kind. I get mine from walmart or the little azteca down the street. But the best is using it with small diced potatoes with peppers, onions and pinto beens. Add scrambled eggs and a little cheese and you have the best mexican breakfast ever....Now I'm hungrier than I was a second ago :-(
For it to be crumbly it's gotta be out of the casing.

but do not actually eat chorizo. It's wayyyy too greasy for me. You didn't get the wrong kind, it's all like that. DH loves it and I cook it with eggs or on the grill a lot. I pick off the skin or whatever the eff that shitt is too, it's so gross. But I do that with normal sausage too though.

Hi there! I've actually seen both kinds. The Mexican version, or "fresh", is what you described (soft stuff...kind of like pork breakfast sausage in a tube). The soft version definitely needs to be cooked. The Spanish version is "cured", and can be sliced, chopped up, and eaten like salami or other hard, cured meats. It's usually smoked, too.
