I saw you mention the ground turkey enchilada casserole. I know it was from a variety of things you threw together, but can you give me some guidance? It sounds yummy.
1 lb ground turkey (the 95% lean stuff) 1/2 diced onion 1 diced red pepper 2 cans of enchilada sauce (or 1 lg one) a whole bunch of shredded cheese (of course!) - probably 1.5-2 cups 1 can of beans, drained (I used pinto beans bc it's what I had on hand) about a cup of frozen corn 6-8 corn tortillas
Sautee the meat w/onions and peppers. Throw in the frozen corn. Add 1 can of sauce to the meat. Spray your pan (I used a 9x9 square glass dish), then layer tortillas, meat mixture, beans, cheese and repeat (and pour some sauce on it before starting a next layer). Bake at 350 for about a half hour.
I also used a pkg of uncle ben's rice - whole whet medley santa fe flavor. I would have layered it in with the casserole but dh won't eat rice, so I just threw it in mine. Olives would have been good as well, but dh won't eat them. He wanted jalapenos but I refused. We're a picky kind of people.
