One of my favorite things to grill is portabella mushroom sandwiches with roasted red peppers, tomatoes, mozzarella, ciabatta. I usually make a pasta salad with it.
Its casual, but so delicious. If I think of any others, I will let you know.
whole wheat pasta, spinach, pine nuts, feta, roasted tomatoes and olive oil.
We always have hummus on hand. Taboulle salad (can buy the box stuff next to cous cous--and it's great)
lunch-baggette with brie and apples or apricots.
These are all things we have in the house when my SIL comes.
Does she eat seafood? Martha Stewart's Shrimp, Tomato, and Basil Pasta is a favorite in our house.

Ratatouille's Ratatouille (Serve it with couscous and goat cheese. It doesn't hurt to pop in the movie while you eat it either. =p)

Black Bean and Salsa Soup (This one is super easy. We make homemade baked tortilla chips to eat with it.)

Black Bean Veggie Burger (We made these last night and they were pretty good.)
