I am sure this is googleable (cooking question)

But, I was also looking for feedback. Has anyone used vegetable broth in lieu of white wine in a recipe? How did it turn out?

  • Yes, I've actually used chicken broth in a recipe before instead of wine (same concept as your question though).  Obviously it doesn't have the EXACT same flavor, but it is definitely acceptable.

    So whatcha making?

    Thank you. I am making Pasta with Shrimp and Asparagus.

  • I've used chicken broth but never vegetable broth. I'm sure it would work just fine. What type of sauce and what are you pairing it with?

  • I'll bet it would work.  I substitute apple juice for white wine, however.  Turns out tasty, too!

  • I would maybe use slightly less broth than the recipe calls for (by a couple teaspoons), since wine has alcohol in it which cooks off, altering the final volume just slightly, plus I would add maybe a teaspoon or two of some kind of light vinegar (white, cider, tarragon, white wine, etc) to mimic the acidity of the wine. 

     

    ETA: Are you trying to avoid using alcohol at all or do you just not have the wine?  I only ask because tomatoes have a lot of alcohol soluable flavor compounds in them that will only come out in the presence of alcohol, thus the wine, so if you are just trying to sustitute for something you don't have one hand, I'd put something else alsoholic in, like vodka.  I've done that before and it works really well, just use a couple teapsoons.  You don't taste it after.   If you are trying to avoid alcohol altogether, just be prepared that the sause may taste a little flat or dull.

    Oh yeah, I'd definitely sub in that kind of recipe.

    Great idea! I have white wine vinegar on hand. I just didn't want to go out and buy a bottle of wine for 1/3 of a cup.

    Momma would end up drinking the rest! Stick out tongue

  • I don't blame you, for sure, I'd end up drinking it too!  But go back and read my edit about the alcohol, you might have something at home that would work.
