Making meals ahead...quick question!

So I will be making several meals ahead this weekend and next week.  Ijust have one question.  Do you actually cook the whole meal if it involves chicken or beef and then freeze?  Or, do you freeze the concoction raw and then have it cook in the oven when you are ready to eat it?  hmmmmm.  I have only done vegetarian lasagna before

Re: Making meals ahead...quick question!

  • I have only frozen meals that are completly cooked and then reheated them.  Some you can reheat from frozen others you have to defrost in fridge overnight before cooking from chilled.  I have never frozen a meal uncooked and then heated it up.

  • What kinds of things are you making?

If you are making casseroles, then you cook your chicken or beef before it goes into the casserole and freeze the casserole before you book it all together.

If you are doing things like steaks that you want to have ready to go, just freeze them raw in their marinade and then thaw and cook them when it is time.

  • Yeah, that makes sense.  Thanks!

  • I'm planning on doing the same and just copying my MIL.  She'll still cook the whole dish.  And its usually ones that have juices/broth, etc. It is usually dishes where I "lightly pan fry" the chicken first, pour the sauce over and freeze. Then it can finish baking when I thaw and put it in the oven.

  • I have frozen meat lasagna in which the meat was already cooked, but I didn't cook it all together, chicken spaghetti (same as lasagna), and swedish meatballs. The swedish meatballs, I just put everything together in the meatballs and froze them raw. That way I just have to pull them out and cook them. In the past, I've frozen spaghetti sauce with meatballs and I cook that all the way, so then I just have to reheat it. It just depends on what you're freezing, what you should do. GL!
