Brunch Recipes

Since we decided to have a brunch for Abby's first birthday I'm looking for great recipes. Thought I'd ask you guys to see what your favorites are. It will take place outside and I'd like to keep the food fairly light rather than a sit down meal.

I know we will have the following for sure, but I'd appreciate any other ideas you guys might have!! :o)

-mini muffins

-mini quiche

-assorted fruit

-french toast (I'm thinking it will be easier to serve as 'sticks' or any other ideas?)

-chicken or egg salad sandwiches (which would you want?)

-baked crab dip

Coffee, juice, and water will be served.

  • Everything sounds good! I would prefer chicken salad to egg salad.  Also, instead of french toast, you could do monkey bread.

  • Looks great!  I'd say chicken instead of egg because you already have the quiche and it gives a variety of proteins.  Yay for brunch - my favorite!

  • I'd go for chicken salad instead of eggs.  If it were me, I'd make a tomato pie as well.  It's YUMMY!  I'll be happy to send you the recipe if you'd like.

    another easy fav is mix browned sausage w/ cream cheese and put in crescent roll pockets.

    Ditto this. I've made this before and it's super easy and very yummy.

    Oh- and definitely chicken salad instead of egg.

  • Sounds great! I'd like the chicken salad.  I don't know if it'd be easier, but you could do a make-ahead french toast casserole (bake the day of) in a pretty dish.
