This is good question so I hope you get some other responses. Baby 411 says 68 degrees is ideal to help prevent SIDS, the hospital told us 70-72 so we were confused. We typically keep ours at 68 at night (we like it cold, especially DH) and during the day if we're home it's on 73-74 with fans going. DD gets hot easily like DH so we've kept the air at 74 during the day and 69 at night - she's in a long sleeved sleeper sack, then she's swaddled and then sometimes I'll wrap another blanket around her too if I feel it's chilly for her.
