"Healthier" Chicken Nuggets?

Any recipes to make myself? I think I remember reading on a board someone who did a broccoli breading but now I can't remember where or the recipe...

  • I don't know if this is considered healthy but I buy DS Mickey Mouse shaped white meat chicken nugget from Costco and they are in a whole wheat batter verse the stuff you get at a fast food place.

  • I make them myself, using a simple recipe.  They're healthy in that they don't contain preservatives, I can use organic chicken, and I can control the amount of salt that goes in.

    -pound of chicken

    -1/2 apple (peeled)

    - 2-3T of bread crumbs

    - a dash of salt 

     pulse through food processor until you have basically a paste.  Shape into patties, dredge in breadcrumbs, place on cookie sheet and bake for 20 minutes at 350.

    - (you could sneak veggies in if you wanted, I've added carrots before and I bet you could do broccoli - but you'd definitely have green nugs!)

  • I made these last night.  DS gobbled them up, and even DH and I didn't mind them.  They were pretty easy to make too.  I will be making these again really soon.

  • I buy the frozen Tyson's one; they have 0 transfats, relateively low sodium and are baked.  I bought some that were whole wheat breading before but they had higher sodium and fat. 

    I certainly wouldn't call it a "health" food, but its not that bad either.

  • I make my own chicken tenders simply by breading chicken tenderlion with seasoned breadcrumbs and baking...but I also give DD Morningstar farms chik n nuggets  ( soy nuggets ) for lunch on the weekends. They are pricey, but they are really good..I find myself taking nibbles of them off her plate, lol. They are better than other frozen processed "real" chicken nuggets in my opinion. DD loves her veggie nuggets !

  • We love Bell & Evans products and they ARE healthy.  The chick nuggets and tenders are sooo good..I've tried all the other kinds and these are my fav.  They are uncooked and not microwavable which I like too..

    I will be trying the above recipes!

    These are the same ones we get - in fact it's the only brand DD will eat... we've tried others and she takes one taste then throws the rest on the floor and cries.  Awesomesauce.

  • Chicken breast tenderloins

    5-6 Whole Wheat Ritz Crackers

    Grated Parm

    1 egg white

    salt/pepper

     

    Food process the crackers, parm, salt and pepper (and any other spices your lo likes). And then dip the chicken in egg and then in the cracker crumbs. You can then bake in the oven at 350 or pan fry in olive oil for more healthy fat!

    DS loves these and they freeze well!

  • We do the Ian's brand chicken nuggets, which I always assumed were healthier than the alternatives but after reading this post I think I need to double check.

    And I've tried making my own ... DD just doesn't like the consistency of anything other than a processed nugget. Boo.
