Whats for dinner this week?

Sunday: Ham and mash potatoes (free ham from easter)

Monday: All in 1 Pork Chop Crock Pot Meal (busy night)

Tuesday: Hot Dogs and Slow Cook bake beans and frozen veggies (busy night)

Wednesday: Meatloaf with bake ahead mash potatoes

Thursday: Chicken Marsala with salad

Friday: Pizza on our way to my nephew?s baseball game

Saturday: We are going to the beach, boardwalk food

  • Monday: leftover from brunch

    Tuesday: turkey burgers and roasted green beans

    Wednesday: breakfast for dinner

    Thursday: sloppy joes

    Friday: beef brisket, unless DH is OOT and then I will pick something up

    Saturday: Indian or chinese takeout

    DS1 age 7, DD age 5 and DS2 born 4/3/12

  • Monday: Spinach salad with all of the leftover veggies that are about to go bad in my fridge. Maybe some chicken in it.

    Tuesday: Crock-pot chicken soup with chicken, broth , a scoop of minced ginger and a bag of mixed veggie - I am loving the kind that has beans mixed in for extra nutrients!

    That's all I got.

  • So far all I know is tonight. :)  Chicken Curry in a Hurry from Real Simple.  I love this stuff:

    Ingredients

    • 1 1/2 tablespoons olive oil
    • 1 small yellow onion, thinly sliced
    • 2 teaspoons curry powder
    • 1/2 cup plain yogurt
    • 3/4 cup heavy cream
    • 1/2 teaspoon kosher salt
    • 1/4 teaspoon black pepper
    • 1 14.5-ounce can diced tomatoes, drained (optional)
    • 1 rotisserie chicken
    • 2 cups cooked white rice (optional)
    • 1/4 cup fresh cilantro leaves, roughly chopped

    Directions

    1. Heat the oil in a large skillet over medium-low heat. Add the onion and cook, stirring occasionally, for 7 minutes. Sprinkle with the curry powder and cook, stirring, for 1 minute.
    2. Add the yogurt and cream and simmer gently for 3 minutes. Stir in the salt, pepper, and tomatoes (if using). Remove from heat.
    3. Slice or shred the chicken, discarding the skin and bones. Divide the rice (if using) and chicken among individual bowls, spoon the sauce over the top, and sprinkle with the cilantro.

    Wednesday: Out for a fundraiser

    Thursday: Caribbean Pork Loin and Ginger Carrots

    Friday: Beef Tacos with avacodo salad

     

  • M - Broiled tilapia, brown rice, salad

    T - Leftover bratwurst, oven sweet potato fries, asparagus

    W - Fend for ourselves (DH teaches)

    Th - Slow cooker pork butt, mashed potatoes, green beans

    Fr - Going out for date night!

    Fri: Mexican Grilled Chicken, Grilled Veggies

    Sat: Take out

  • You are all making me feel like such a slacker. With DH working 2nd shift, I've been far too lazy to cook for myself. I've just been grabbing whatever I can find in the house.
