I always used to plan our weekly meals on Monday's, but I got out of the habit lately and I'm trying to start back. Makes the week so much easier if I already know what I'm cooking and get the grocery shopping out of the way. Please share yours so I'll have ideas for next week!
Last night we had family over so I made a big dinner:
Four Cheese Lasagna, Salad, Tuscan Bread w/dipping sauce, Procuitto Wrapped Asparagus and Melon, Antipasti platter w/Salami, Cured Olives, Artichoke Hearts
M: Chicken Divan, Mashed Potatoes
T: Spaghetti w/Meatballs
W: NY Strip Steak on the grill, Caprese, Roasted Potato Packets
TH: Tuscan Pasta w/Basil Cream & Garlic Toast
I usually don't cook on the weekends.

I know that we will be having BBQ one night and possibly pasta another.

I keep an excel spreadsheet of all the "successful" dinners I have made and once that is completely built, I can start planning a month out instead of a week out. Anyways, here is my menu for this week:

Do you make the calzones from scratch? Can you share the recipe? Caleb's favorite thing to eat is pizza, so it would be nice to have a variation on that!
Also, for your chicken quesadillas, what type of chicken do you use? I mean, do you just shred up a rotisserie chkn or do you actually cook some breasts or something? There are so many things like that that I love to make w/chkn, but get so tired of cooking and shredding the chkn!
Mmm...pleae share that baja fish taco recipe! Sounds yummy!
What kind of ham do you make? Caleb loves ham, but I never make it. Actually, we never even have it except for at Easter when my sis cooks an entire ham! Sad! Do you just buy some pre-cooked slices like Smithfield?

For the chicken, I usually cube it, season with fajita mix, and brown it with peppers/onions. I guess I should call them chicken fajita quesadillas. I hadn't thought of using a rotisserie, but I'd bet that would work great. I know what you mean, shredding, cubing, etc. gets so old, and we eat chicken a lot! I told DH that next time, I'm boiling all the chicken and then freezing them so all I have to do is thaw it and cut it up.
Here is my calzone recipe, really easy!:
1 can refrigerated pizza dough
1 lb Italian sausage (or hamburger meat)
1 pkg pepperonis
2 cups shredded cheese
Parmesan cheese
2 tbsp butter
Preheat oven to 375. Brown and drain sausage. Spray a rectangular baking sheet, and then roll out dough thin and flat. Layer the cheese, sausage and pepperoni on one half of dough, until desired amount. Fold the other half of the dough on top of the meat and cheese, and press edges together with a fork. Melt the butter and brush over the top of the calzone, then sprinkle parmesan cheese over it. Cook at 375 for 25 mins or until top is golden brown.

But I bake Tilapia (some people fry theirs)- spicy seasoned with chili pepper, red pepper, S&P, and a splash of lemon juice.
And I make soft tacos topping the fish with the cream sauce, shredded lettuce and then top with a tomatilla salsa. Yummy!
