I read that you should plan your meals for the week ahead of time to help organize you better and to save money so you only buy for those meals. I thought i would give it a try but, i'm so board with what i have been making so i need so dinner ideas. What do you usually make for dinner?

We are pretty bored too. But we usually make an italian dish and mexican dish most weeks. Lasagna or baked ziti or spaghetti. Chili or tacos or something similar. We tend to have a pizza night too... It's like a weekly challenge to think of things to put on our list.
I recently made 2 large lasagnes & froze most of it. We've also had tacos & spaghetti w/meatballs. The taco meat & the meatballs freeze well too. (Can you tell that ground beef was on sale?)
I also poach chicken breasts & cube or shred them, then freeze for use in a stir fry, tetrazzini, enchiladas, chicken salad, etc.
Since I prefer baking over cooking, I usually have a log of frozen homemade cookie dough (choc. chip, peanut butter or oatmeal raisin) on hand. Just pull it out for 30 min. to thaw, then bake as directed. It's great for company or a quick dessert.
Lately, not much. But I have some go-to meals for when I DO cook:
1) Kielbasa with fried apples and onions using this recipe. So yummy!
2) Pasta with homemade meat sauce - not hard to make and so tasty!
3) Bean burritos - use tortillas, black beans, salsa, rice, guacamole, cheese and sour cream. Yum!
4) Tuna/salmon/crab cakes - toss whichever canned seafood you choose with breadcrumbs, a beaten egg, some mayo, mustard, onions and diced bell peppers. Fry. We make them with sweet potato fries.
I also always make a salad so we have a veggie if I don't make a cooked one.
We're both vegetarian. I usually do at least one pasta dish, rice or potatoes with curried veggies, sometimes I do soba noodles with greens & tofu, sometimes burritos or enchiladas....
Last night I made mashed sweet potatoes with rosemary and butter. I blackened some tempeh (use chicken if you eat meat) and sauteed it with beets, green beans, and a splash of soy sauce then served that over the sweet potatoes. It was delicious.
Since we don't eat meat, the way I shop is I pick out one carb-base per meal. Pasta, rice, potatoes, etc. Then pick up fresh seasonal veggies, some beans, tempeh, and/or tofu. I have a bunch of spices and some sauces in stock and I can pretty much wing it during the week.
All the pp's used most of my ideas....
but my simplest and one of my favorites is pita bread pizza. I buy the small pitas and stick them in the freezer. When I need a quick meal I take out as many as I need (1-2 per adult) top with tomato sauce, herbs, cheese, and toppings. Stick in the oven at 450 until cheese is melted. The pita's make a great crust!
I love the crockpot, but I go through spurts with it. I use it to make pot roast, beef stew, etc.
Other than that, I make tacos, spaghetti and meatballs or sausage, turkey meatloaf with mashed potatoes, salmon, homemade pizza, chili, stir-fry. I have trouble coming up with ideas often though and I feel like I'm always making the same stuff.
