Brunch menu help

Does anyone have any fun ideas for a brunch potluck menu??

I am coordinating a pot luck brunch at a friends house next weekend and need menu advice. We are getting together to work on our friends yard/garden/.

I was thinking of providing the main dishes and asking people to bring other items. I saw a recipe I liked for Stuffed French Toast (in a cassarole dish) and Baked Eggs Benedict. Both of these looked like it would be easy to make and will feed an army.

The only other things I can think of are fruit and/or fruit salad, bagels/creamcheese, and juice.

Also, Can you make a Momosa with OJ and sparkling water? Since everyone will be doing yard work and sweating I don't want to serve alcohol - but Momosas are so *brunchy* to me.

  • I think you'll want to use OJ and Sprite or 7up.  The sparkling water will make it taste, well, watery!  And don't forget a carafe of coffee.

    Breakfast bread pudding is another alternative to stuffed french toast, but either sounds really good!  I'm trying to think of what you normally see at a small breakfast buffet or continental breakfast.  Yogurt and cereal?  Breakfast potatoes?

  • I've been making yogurt parfiets(sp) lately.  You can make them in clear plastic cups as well and they look really pretty.  These can be made the night before.  Layer the yogurt then strawberries and blueberries mixed with apricot jam - do this twice.  Also next to them on the table I put out a bowl of granola to add as guests would like.
  • DH recently brought home a recipe from work from a woman who made a danishy kind of thing and it was amazing and very very rich

    2 rolls of crescent rolls,

    2  8 oz pkgs cream cheese

    1 tsp vanilla

    1 1/2 cups sugar

    1 1/2 tsp cinnamon

    1 stick butter

     Take one roll of the crescent rolls, leaving them in one full sheet, and lay them on a sprayed 9x13 pan. Combine the cream cheese, vanilla and 1 cup sugar and cream together, spread over the crescent rolls. Cover with the other roll of the cresencet rolls, again don't seperate them, leave them as whole sheet. Melt the butter and pour over the entire dish, then combine remaining sugar and cinnamon and sprinkle all over the top. Bake at 375 until brown.

  • I would say fresh fruit too.  Cantalopes, strawberries, grapes, and so on.  If I were doing yard work right after, I would want to eat light.

  • Ok you have a few french toast ideas. I love this because you can prepare overnight & stick in oven just prior. SO delicious!

    I use Challah bread (couple days old) & reduce the butter & brown sugar a bit.

    What about muffins?

    I made "momosas" with pineapple juice and sparkling water or club soda.  You can do the same with OJ.  What about trimmings for bagels like lox, tomato, onion, capers and cream cheese?  What about some potato dish like roasted potatoes or hash browns?

    ETA:  easy roast potatoes -- take Yukon gold, scrub clean and chop into pieces.  Coat all pieces with olive oil and spread on a baking sheet (you can line with parchment paper for easier clean-up and non-stick).  Then use pepper, salt and Lawry's seasoning salt.  You can also use other herbs you like instead of the Lawry's like Italian seasonings, rosemary, etc.  Bake at 425 for 30 minutes.

  • I have a killer recipe for Hash Brown Casserole.  It is probably the most fattening dish ever, but it's SO good..   Super duper easy.  I usually skip adding ham and the topping.. doesn't really need it.

    1 bag shredded hash brown pototaoes

    8 oz. sour cream

    1 stick melted butter

    2 cups shredded cheddar cheese

    1 can cream of mushroom soup

    1 cup cooked and chopped ham (optional)

     

    Topping:  (Also optional)

    2 cups crushed corn flakes

    ? cup melted butter

     

    Mix all ingredients together and put into a big casserole dish.  Refrigerate overnight, if possible.    Mix topping and put on top.  Bake at 350 for about an hour? longer if you like it crispier.

  • I say go for the Momosas, they are light and refreshing, you can have as much or as little champagne as you want! 

    This may sound a little strange, but it is super easy and I actually did this for a brunch recently...cook/bake a ham.   They are really easy, slap some pineapple slices on it, follow the instructions for the glaze and you can't go wrong.  It looks pretty and delicious.  I also served scrambled eggs and potatoes and had fruit, cheese, deviled eggs and tons of breakfast breads and muffins.  

    And don't forget the COFFEE!!!
