Ok getting ready to cook some artichokes for dinner and need help. I've these hundreds of times but the last couple they come out really bitter tasting!!
Peel off the toughest outer leaves, cut off the stem, and cut the darker green tips off of the remaining outer leaves. Most of the bitterness is in the darker green parts, so if you remove as much of that as possible, the rest should taste great!

You need to acidulate the water. I either use lemon juice, apple cider vinegar or white wine.
