I know of a couple drop in daycare places in Eagan. And I saw clubkid in Edina, which is hourly childcare. I don't know anything about these places, but I did look into it a while ago. I know the drop in places in Eagan are $$$ compared to regular prices, but they'll do if you really need it.
I'd check with the centers in your area. The center that I worked at didn't usually do that, but then the recession hit and we would take whatever we could get. We had a kid that came one full day and one half day.
Just be warned that most daycares will usually have something in the contract that they will be able to break your contract if a family wants to enroll a child full time and wants the spot.
I'm assuming this would be for the same day (or half days) every week. Otherwise, if it were for different days, that would be more difficult.
when I worked in a center (in high school) the families who wanted this essentially had to have a "partner" whose kids would be there opposite.
So if you wanted M,W the other family could have T,H,F. We may have taken on a part time child if there was room, like amy said, we would have cancelled that child's spot if a full time space was needed.
Your best bet is probably going to be finding a college kid who can watch your LO or a home day care center where things can be a little less regimented.

Call a few in home daycares in your area. The one I work at is very flexible and we have a few kids that only come 1-2 days a week and some are only half days.

If they have space, most New Horizons will do this.
They do part-time schedules down to 1 day a week. They also do 'flex' schedules for schedules that change weekly (so you could go M,T,W one week, T,F the next week, etc.)
I agree with a PP though, that if they have are close to/at capacity, they will bump a part-time kid for a full-time one.
There is also a parent co-op in Saint Paul near you that you should look into. Google "hourly drop off st. paul" and you'll find their website because I so can't remember the name of it. Basically you pay a fee, volunteer in some capacity to help things run, and then coordinate the childcare. it's a pretty good deal potentially though I found for some of my desired one-off things it was cheaper to do Club Kid in Edina b/c while Club Kid was slightly more expensive ($1.35/hour more), there was NO fee...meaning it would take quite a few hours at the parent co-op before I 'earned back' the savings compared to Club Kid.
