I don't know about dinner yet, but for lunch I'm gonna make a mushroom and cheese omelette. We have left over cheese shredded from taco night and I have a bunch of mushrooms from costco.
2-3 pound boneless pork loin roast
2/3 cup maple-flavored syrup
3 tablespoons Dijon-style mustard
2 tablespoons cider vinegar
2 tablespoons soy sauce
Salt and pepper
1 pound carrots, pared and quartered lengthwise*
4-6 medium red potatoes, scrubbed and halved
Cooking Directions
Stir together maple syrup, mustard, vinegar, soy sauce, salt and
pepper. Spread evenly over pork roast and place in a shallow roasting
pan, surrounded by carrots and potatoes. Roast in a 350 degree F. oven
until internal temperature of pork, measured with a meat thermometer,
reaches 155-160 degrees F. and vegetables are tender, about 45 minutes
to 1 1/4 hours. Remove from oven; slice roast to serve with vegetables.
Serves 6, with leftovers.
*Other favorite vegetables can be substituted: Brussel sprouts, winter squash wedges, sweet potatoes.<
Minus the 'taters. 'cuz I refuse to go to the store.
We have no food in the house and haven't been to the store because we've been waiting for Comcast to no show again. Jerks. I fear it will be fast food. Le sigh.
The rest of the week will be good however, because it's all planned out. Tomorrow, finally, I will get my pot pie.

I plan on sauteing (sp?) some red peppers, onions and diced chicken breast in olive oil and then adding a red curry sauce from Traders Joes. We'll have it over jasmine rice, hopefully it will turn out good.
