I was reading the nutrtion section in my Bradley book last night and thought I'd share this about eggs... I used to be a long time mostly just egg-white only eater bc I didn't want the cholesterol. I stopped that a year ago when I learned the yolks are vitamin packed (one of which is iron and I was bleeding from my m/c heavily & not eating or drinking much to replenish my body so my mom was trying everything to prevent me from getting really anemic). Anyways... here's the excerpt from "Natural Childbirth the Bradley Way" book...
"One of the most aggravating iatrogenic (that is doctor-caused) food fads nowadays is skipping eggs for fear of cholesterol. Actually the egg white is loaded with lecithin, a substance that breaks cholesterol cells into teeny particles that can pass easily through the walls of the blood vessels without clogging them. Perhaps cholesterol is a dietary problem, but not from the egg, since the lecithin comes already built in for you. (As long as you don't eat just the yolks.) Eggs are cheap compared to other sources of protein. They pack a goodly amount of protein in a yummy package that can be served in many different ways: soufleed, scrambled, fried, in omelettes, boiled for snacks, chopped into sandwiches or salads, and added to lots of foods you happen to be cooking, just for the extra protein. Beyond protein, the eggs is similar to milk in that this tiny oval wonder has so many of the other vitamins and elements you need for good health. You would have to munch your way through quite a variety of items to touch as many of the nutrients as come all together in the egg or glass of milk."
Bon appetit!

That reminds me that it's time to hard boil another batch. I like to have them ready for snacks - great source of protein.
