Walmart has this jalapeno cheese stuffed chicken breasts in the freezer section that you just pop in the oven and they are soo good. They have other kinds like florentine chicken but these are our fav. I just make some potatoes and frozen Steamfresh veggies on the side. Easy, pretty healthy and yummy.

Tonight it's bugers on the grill with pasta salad. Tomorrow we're having BBQ pork steaks, leftover pasta salad and grilled zucchini. Wednesday night is big truck night at our local park (PAT event), so we'll be going out. Thursday night will probably be grilled pork tacos, and Friday we'll have chicken and broccoli pasta.
We are also having tacos. I am making crockpot beef tacos. Mmmmm!
Rest of the week: - Spaghetti with salads and garlic bread - Grilled salmon, mashed potatoes, carrots - Spinach and bacon penne pasta with grilled asparagus
We had pasta fagioli and a tossed salad. It was the first time I've cooked in a week.
My menu planning is all off because of Matthew's hospital stay and his new diet restrictions, but this is what I'm roughing in for the rest of the week.
Tuesday: broiled catfish with pomegranate vinaigrette, coleslaw, wild rice with cranberries and almonds, lemon angel food cake.
Re: What's for dinner tonight?
We're having steaks tonight with grilled veggies (zucchini, yellow squash, tomatoes and onions in a foil "boat" with zesty Italian dressing).
Turkey meatballs
Marinated chicken cutlets
Maybe a Publix sub one night (easy)
homemade chicken fingers (I think I am going to do garlic cheddar), steamed asparagus and some noodles.
Usually I roast the asparagus but I am hoping the steamed version is easier for DS to chew.
I have no clue about the rest of the week....
That soup sounds really good--do you have the recipe? Thanks!
"Lite" meatloaf, broccoli and red potatoes
Tues - Crock pot chicken parm and a salad
Wed - Grilled salmon, rice, sauteed summer squash/zukes/onions
Thurs - Chicken pot pie and salad
Fri - out!
No recipe, I'm going to wing it. I'll let you know if it turns out!
