NTR: What to do with boneless chicken breasts?

I keep making the same things over and over----I think my DH is bored with it all LOL (as am I).

Any ideas of what I can do with this package of boneless, skinless chicken breasts?

  • I'm boring too, but I make shredded chicken tacos or cube the chicken with marinade and cook in a skillet on the stove.  Sometimes I put it over a salad or sometimes rice and veggies.  Also I bake with a marinade in the oven or grill.

  • My friend told me the easiest thign int he world to do with them especially if you don'thave time to cook. I throw them in a crock pot (can put them in frozen or not) with a jar of fat free chicken gravy. They are so tender you can just pull them apart with a fork when they are done. They almost taste like roasted turkey to me. We actually make stuffing with it sometimes and it is like a mini thanksgiving dinner.

    What do you use for a marinade? 

     

  • We've been doing LOTS with chicken since both DH and I are trying to lose weight.

    Lawry's makes a ton of great marinades that we've been trying out. There's an Asian one that makes a fantastic stir fry. We just slice the chicken up, marinate it for awhile, then cook it in our wok, throw in veggies and some extra sauce, and serve it with (brown, in our case) rice.

    You also can't go wrong with marinated chicken on the grill.

    And we've been doing a healthy chicken parmesan. We use the Shake N Bake parmesan crusted breaded coating, roll the chicken in it, bake it, and then serve it with the Barilla Plus pasta and red sauce. It's quite tasty.

    I like privacy. A lot.
  • What about grilling them outside?  One really easy go-to dish of ours is garlic chicken and noodles.  Olive oil in dish and on top of chicken...top with lots of chopped galic, s & p...cook covered in 350 oven until done.  Take out chicken and put in cooked spaghetti noodles.  Roll it around in the juices.  Add lots of parm. cheese.  THen put the chicken back in and serve.  It's so good and so easy!

  • I have some ideas in my blog. The latest recipe we made with it was chicken tortilla soup.

  • Chicken and noodles :) 

     All I do is throw them in like 4-5 inches of water in a big pot and boil them until they are cooked, then take them out and cut them up, then throw them back in the water.  I always season with garlic salt, seasoning salt & crazy janes.... I also add chicken stock or chicken flavor to taste.  I then dump one bag of egg noodles in the water and let them cook.  Once the noodles are done, your good to go.  It's so easy, the hard part is just getting the flavor from the seasoning/chicken stock  you want!

  • grill them and add them to a salad.

    grill them and make sandwiches with mozzarella and roasted peppers

    bake them with onions, red and green peppers.

    bake or crockpot with potatoes and carrots

  • mix catalina dressing, a packet of french onion soup mix, and a can of jellied whole cranberries and pour over the chicken and bake for 90 min!  It sounds so gross and nasty but it's super good.

  • I got the idea from on here. Pulled bbq chicken. Throw the chicken in the crock pot with some water, bbq sauce and let cook for about 6 hours. then serve on soft rolls

  • - grill (or pan fry) with a little olive oil, salt and cayenne pepper. Top with chunks of avocado tossed with lime juice and red onion.

    - fajitas

    - shredded chicken enchiladas

    - bread with a mixture of bread crumbs, brown sugar and cayenne and bake

    - saute with lemon juice, chicken broth and mushrooms.

  • my FAVORITE is chicken tacos.  i put them in the crock pot with some water and chiicken taco seasoning.  then make some soft shells... we fry them quick in vegatable oil.  YUM.  we had it for dinner last night.

  • I'm all about chicken enchiladas

    I also made a quick chicken alfredo last week - cubed up 4 breasts, browned them in a little butter, took them out of the pan, and then put some onions and garlic in to cook for few minutes, added some cream cheese and parmesan cheese and a little bit of milk, turned up the heat so it would all melt and mix and then put the chicken back in the simmer in the sauce and served w/ whole wheat penne.  The whole thing took about 20 minutes.
