I'm making up a casserole recipe with zucchini, ground beef, tomatoes, and rice.
I'm also making a quinoa salad with zucchini, squash, spinach, tomato, onion, garlic, and feta with a light lemon vinaigrette. This is for my lunches this week.
Oh, I KNOW I will be right there with you in less than 4 months. ;-) Lately, we haven't been having anything good either. I am just not in the mood to cook and when I do cook it doesn't taste good to me.

If anyone has a "frozen chicken breasts in the crockpot" recipe that's not KA's tacos, I'm all ears!
We like to put chicken breasts in the crock pot with seasoned canned tomatoes, a little corn, chopped bell peppers, chopped onion, and what ever spices we have lying around. We then throw the mixture on top of a bed of brown rice. Easy, tasty and healthy.
I say this as I stuff my face with a leftover spring roll from a couple of days ago.
This week I had on the menu spicy garlic lime chicken fajitas and I'm going to try Bride's chicken/orzo/dill bake. I tried a couple of new recipes - slow cooker pork ribs and sweet and spicy pork tenderloin- but wouldn't recommend them. I tried a new recipe last week that was good - 3 cheese penne bake. I used 8 ounces italian sausage, doubled the tomato sauce and reduced the crushed pepper (it was plenty spicy with the italian sausage). I also left out the bell pepper (I don't like it). It was really quick to make on a work night and we both liked it.
Leftover homemade chicken gumbo and a salad with romaine, red bell peppers, cucumbers, strawberries, clementine segments, and walnuts. I ate some salad for a late lunch and will eat the rest with DH for dinner.

I made 'sloppy joe' lastnight and tonight making a pizza dough and crumbling the meat on it with a little cheese.
so left over pizza
You can pretty much just put any kind of sauce over the chicken and call it good. BBQ, tomato sauce, etc.

We've had a lot going on this week, so I've only planned to cook 2 nights.
We had portabella mushroom fajitas one night

last night we had chicken curry w/ palak paneer and garlin naan. it's my current favorite under 30 minute meal.
tonight is parmesean pork w/ polenta and green peas.
tomorrow night is potato gratin w/ ham
