Definitely check out The Eco-Friendly Family Blog for a lot of great information. There's more there than could ever be written in response to all your questions!
But here's what we use now, although it was very different for DS as a newborn.
We use a combo of fitteds, prefolds & pockets with a few AIOs thrown in that I bought from all over. Some were used that I bought from local mamas, some were used I bought from Jillian's Drawers Gently Used and some were bought new from various online retailers.
I'm not sure exactly how many diapers we have. More than we need, that's for sure. I think we have like 10 fitteds, about 10 pockets, 3 or 4 AIOs, and a dozen prefolds. We wash every other day so we never go through all those.
Pros for us: little to no diaper rash, no nasty chemicals plastered against DS' precious junk 23.5 hours a day, no human waste going out with the trash and most of all....a cute fluffy butt!
Cons: an extra load of laundry every couple of days, but it doesn't phase me at all
We have used several types, but are using mostly Fuzzi Bunz perfect size now.
We buy them almost exclusively from Fuzzibunzseconds.net most of the time they don't come with inserts when you order them there, and you'll have to order inserts somewhere else (microfiber are most commonly used, but we used prefolds in ours for years as a cheap alternative). But a few weeks ago I was able to order a pack that came with inserts too.
Though if I was starting now, I'd give FuzziBunz one size a shot. But by the time they came out with those, we had so many sized ones, we just stuck with them. If we supplement more diapers again, I will probably try more one size diapers.
My only complaint is that the elastic seems to stretch out eventually. But I'm talking after like 2 years worth of use. In the past we've just replaced them, but since we've hung on to most of the worn out ones, I'm thinking of trying to find a seamstress to repair them. Even if it's $5 a diaper, that'll save us a ton of $$.
Oh, and we've only been using microfiber for a few months now, but I have heard that people have lingering smell issues with it. Nothing an occasional stripping couldn't fix though.
We used Kissaluv fitted and prefolds at the newborn period, then exclusively prefolds, and now exclusively Bum Genius Organic One-Size All-in-Ones.
We rented the KL0s from Nell's Natural Baby (very happy with that arrangement) and the prefolds were a gift bought at a local baby store. The next size prefolds were from Green Mountain Diapers, which are AWESOME prefolds. We got the BG AIOs from Cotton Babies.
Loved the KL0s for the newborn period. They fit really well and are super easy to use. We liked the simplicity of prefolds, but DD didn't like the tugging involved in getting them on and our child caregivers wouldn't get them on right which meant we were going through a ton of covers. We did the math and realized that AIOs weren't that much more expensive. We are super happy with them. Convenient, quick, easy, and durable.
