Round 2 of the yummy & uber healthy breakfast bars are baking

I took the breakfast cookie recipe and played with it a bit and everyone loved them!  I had 8 kids & 7 adults test them.  The only one who wasn't won over was my dad...and well...if I hadn't told them they were healthy he would have loved them.

This time my neighbor came over and we added in some nutritional yeast flakes and some extra fiber...the batter was to die for yummy.

30 minutes and counting until we can taste test!

  • As soon as we have the thumbs up or down on this version it will get posted.  I am also going to try a version that is half butter and half pureed white beans.

  • When I made them I subbed 1/4 cup for of the whole wheat flour for flax seed meal.

    Seeking variety this week I made an oatmeal/banana/walnut breakfast muffin that is super low fat...next time I'm going to add a few chocolate chips :)

    Oh...there is little resemblance to the original recipe for me other than the oatmeal and whole wheat flour. Wink
