I want to make a special dinner tonight for DH.
I picked up salmon for me but he doesn't eat fish so I have some chicken breasts.
I am making along with the chicken, roasted potatoes with lemon and onions, buttermilk biscuits and marinated broccoli.
How should I make the chicken? Its boneless/skinless breasts.

If you have a grill, I would marinate the chicken and grill it up. However, that could be a little time-consuming.
Often, I'll coat the chicken breasts with spices (S&P, garlic and onion powder, a little paprika and maybe a touch of cayenne) then pan fry them for just minute or so on each side in olive oil.
Basically, you're blackening them and getting a crust going. Then, I finish them off in the oven for about 10 minutes. They always turn out really good.

This sounds good! I have a spice jar labeled rotisserie chicken on it and will maybe coat it with some of that!
Should I rub them with some oil first to help the spices stick?
Nope, you actually want them to be dry (some people use paper towels to wipe the chicken breasts down first) so the seasonings stick.
