DH and I are taking on Easter dinner for his family. His mom normally does it, but his grandfather is having open heart surgery on Friday.
I have no clue what to cook for Easter! So far I have ham and macaroni and cheese on the menu.
What are you ladies having?

We are actually going out to eat this year. Normally Easter is decoration for where my grandparents are buried down in Jasper. My whole family gets together for it. We are opting out this year. We wanted Aubrey's first Easter to be at church, so we are kinda starting our own traditions. I'll miss all the good food my family has though lol.
My mom sent out an email with who has to bring each thing...these are the things she has listed:
ham
mac & cheese
baked beans
dressing
corn
deviled eggs
veggie casserole (it is amazing...let me know if you want the recipe!)
dumplings (b/c my uncle makes the best and they are required at all family events!)
rolls
banana pudding
a couple of different cakes
You're brave! I have no idea what to serve. I'm banking on being at my mom, grandma's or MIL's!
To be fair, we did just host most everyone this past Sunday for M's baby dedication.

We are usually at DH's Gradmother's for Easter. It's a potluck and it's always the same stuff. Fried Chicken, Ham, Broccoli Casserole, Mac N Cheese, Potato Salad, Deviled Eggs, Biscuits, Rolls, Pintos, etc.
I hosted Easter for the more immediate family one year and had Ham, Mac N Cheese, Green Beans, Deviled Eggs, Crescent Rolls, Sweet Potato Casserole and Chocolate Cake for dessert. Later in the afternoon (since it's the final round of the Master's) I served Lemonade and Pimento Cheese Sandwiches in green cups and on green plates like they do at Augusta National
Since I can't travel home for Easter at 38 weeks, I'm cooking dinner for DH and I with similar things as the fam, which is like T'giving and Christmas.
Turkey breast, ham, dressing, gravy, mac and cheese, deviled eggs, pound cake with strawberries and whipped cream. I've got to think of some other dishes to go along with all of that... Ha. I say that I will cook all of that now, but it's likely not going to happen.

I won't be 38 weeks pregnant and I told Wes since we aren't going to be with family this year that we would go out somewhere after church because I just wasn't up to cooking an Easter meal for me and him. So yeah you are pretty much superwoman to me
I have thought of cooking for just me and DH. Each of our families is a 2 hour drive away. My mom keeps asking me what we are doing and I just don't know.
I'm always in charge of the holiday menu. This year for Easter we are having...

I do seriously want some ox tails! I grew up not eating pork and my mom used to put them in her collard greens! Mmmm, yum and more yum! I might have to hollar at moms and see if we can't get that in!
Ashley, here is that recipe:
Veg-Al Casserole
What you need:
2 cans of Veg-Al
1 can of corn
1 can of cream of chicken
2 cups of shredded mild cheddar cheese
1/2 cup mayonaise
1 sleeve of Ritz crackers
Optional: 1 can of Swanson chicken (I do this when I make it as the main dish.)
How to make it:
Drain all cans. Empty everything into one large casserole dish and mix well. Once everything is mixed, crumble the Ritz crackers all over the top. Cook on 350 for 30 minutes, or until the top is browning and the sides are bubbling.
It is so cheesy and so good! Trust me...I am not a big vegetable fan and I love it! I double it for family events.

Directions
Preheat the oven to 350 degrees F.
Grease a medium-size casserole dish with butter.
In a large bowl, stir together the sugar and flour. Gradually stir in the cheese. Add the drained pineapple chunks, and stir until ingredients are well combined. Pour the mixture into the prepared casserole dish.
In another medium bowl, combine the cracker crumbs, melted butter, and reserved pineapple juice, stirring with a rubber spatula until evenly blended. Spread crumb mixture on top of pineapple mixture. Bake for 25 to 30 minutes, or until golden brown.
This sounds fabulous! Is this more of a side dish than a dessert?
yes, although it is sweet, i would serve it as a side dish just like you would a sweet potato casserole.
