what's on the menu for this week? i need some inspiration!
I don't know that I can provide much in the way of inspiration but here's what I'm planning this week:
M-rainbow rice and beans and apple cider brussel sprouts ( both from Vegan Yum Yum) Odd combo but need to eat the brussel sprouts before they go bad
T- spicy tomato and chickpea soup with grilled cheese for the non-vegans in the house
W- tostadas (from The Kind Diet) with cheese for the non-vegans ETA: and mexican rice from the McDougall Quick and Easy cookbook
Th- black bean soup and my version of fuji apple salad from Panera
Fri- fried udon noodles with veggies and baked tofu
Sat- tortellini with tomato sauce for the non-vegans and I'll have leftover something from earlier in the week
I usually have super casual dinners b/c DH is often not home for dinner.
Our veggie meals this week are:
black beans and rice (seasoned with onion, garlic, cumin, paprika, black pepper, cayenne pepper and oregano)
Daahl/ curried red lentils (I add tomatoes and spinach or zucchini and serve with Jasmine rice)
Homemade pizza

How about a panini with really great sourdough bread, roasted red peppers, spinach, artichoke hearts, pesto and mozzerella cheese. Mmmmmm.

veggie enchiladas- I have a great recipe with black beans, corn, spinach, and pepper jack cheese
Veggie quesadillas
grilled portabella sandwiches
stuffed mushrooms
taboule salad and falafels
red beans and rice

eggplant parm

Now that I've made it, heartily recommend - even DH (the non-veggie) liked it and didn't complain it was meatless.
