I was making homemade mashed potatoes last night when my dad reminded me I had pre-made, store bought ones in the fridge that needed to get used up so we used those. Now I have a lot of riced potatoes sitting in the fridge waiting to get used. I am thinking I can attempt gnocci or I can freeze them to make mashed potatoes later in the week/month.

I make it with a gorgonzola cream sauce. And walnuts. Or roasted red peppers. Or pears. Or all of the above.

And...I have an abundance of goat cheese and a jar of roasted red peppers. I bet I could make something really yummy out of that.
It is time consuming but well worth it. They freeze well, too, so if you end up with a giant batch you can always split it.
My family has a "if it isn't red, it isn't sauce" rule, so we do marinara. lol

The sauce I make every time. The gnocchi I have done both. The hardest part is the ricing, so since you have that done, it is pretty easy from there.
I like vodka sauce with gnocchi a LOT. we used to eat that about once a week in the UK, but I have a harder time finding fresh gnocchi here so we haven't had it since we moved back over 18 months ago!
I think this is a pretty time consuming process...but so delicious!!! I love gnocchi with pesto - yummy!!!

Those sound yummy but I have a diabetic husband and father who both have no impulse issues when it comes to food...so I am scaling back the amount of sweets I make.
Olive Garden has this absolutely wonderful chicken and gnocchi soup. i'd try something like that. it's a cream based soup.
