So, rather spur of the moment it was decided that my DH and I are hosting Easter brunch on Sunday. There will be 11 people and I'm trying to think of some good things that we could serve..but I'm not really gifted in the kitchen!!
Mostly..I'm looking for some ideas of things that could be prepared in advance (night before or morning of)....that will hold up well. With the LO, we never know how much time we'll have and we don't want to be furiously scrambling dozens of eggs as people are arriving!! Any suggestions are appreciated....

We do Easter Brunch every year - it is one of my favorite meals to prepare. I make Overnight French Toast Casserole (recipe below), Waldorf Chicken Salad (make ahead), fresh fruit with fruit dip (make ahead), bacon and sausage, ham (already prepared from honeybaked ham)
Ingredients:
1 or 1 ? loaves of challah
2 cups of milk (whole milk or half and half works best)
8 eggs
2 teaspoons vanilla
2 teaspoons cinnamon
Grease 9x12 pan. Fill with bread to within ? of top. Mix egg...s, milk, vanilla and
cinnamon. Poor liquid over bread (between each layer). Cover and refrigerate overnight.
Topping (next morning)
? cup butter (melted)
1 cup of brown sugar
1 cup pecans or walnuts (optional)
Combine topping ingredients and pour over top of bread. Bake at 350 for about 50 minuses to 1 hour until puffed and golden. Serve with syrup.
most egg bakes or french toast casseroles can be prepared in advance and then put in the fridge before baking! so something like that will be your best bet, imo. everyone loves a basic egg/sausage/bread/cheese baked dish!
and then you can cut up some fresh fruit (if you do it ahead of time, toss with a little bit of lemon or lime juice to help fight off oxidation), have some store bought pastries (or make some muffins ahead of time), a few different juices, and voila!
Because we're fancy like that.
