We have found a great gently used Odyssey - 2006, 38 thousand miles, leather interior (actually I don't love this aspect, I like cloth. But certainly leather has its benefits too, the heated front seats are a bonus.) It's a beautiful slate blue (generally I'm not a huge fan of blue for cars but this is a really nice color - light grey interior.) It's a very nice vehicle - roomy - good price - Honda certified - it's got a lot going for it.
BUT .... we saw some really nice gently used Pilots too. I love the 4 wheel drive aspect. Definitely a lot less roomy though, I was a little surprised by how similar to my Accord the room is (even with the 3rd row seat which is pretty tight and less easy to access than in the Odyssey.)
I think we're going to get the Odyssey ... but part of me is still on the fence ... and also wondering - is a mini-van a little ridiculous for a family with just one child? I don't anticipate any more (would welcome another, it's just very unlikely.)
We did rent a mini-van for X-mas travel and FILLED it - between Jack, dogs, his stuff and gifts - literally FILLED it. And it was great to have the space.
So I'm just talking this through - to myself, ha ha! But any input welcome, I told DH I'd post here for some additional input/insight/advice before we make our decision. Thanks!

From what you've described--I would stick with the Odyssey. It has the room that you are looking for. Even with for a family of 3. The Odyssey will be more family/kid friendly, IMO. Plus, as you say, you've filled a mini-van before. And, as LO gets older, he'll have friends--so you'll have plenty of room to tote and carry!

We may only have one kid too, and we have an Odyssey. But we didn't get it JUST because of DS. We like to camp and go on road trips, which often requires a LOT of stuff. The mini-van is absolutely perfect for all of this.
Plus, I just love the automatic doors and in the rain, I can get in the one side w/ DS, then get him into his carseat on the other side of the car, etc. w/o getting soaked.
Also love the ability on the road (obviously w/ both DH and I there!) to be able to crawl from the front to the back and sit w/ DS if he gets upset on a long road trip.

From someone who was (and still kind of is) SO anti-minivan but bought a minivan last week (a 2008 Toyota Sienna), I say go for the Odyssey. They are seriously so similar to the Pilot, except for a few key things -- if the Odyssey is anything like my Sienna, it has TONS more cargo space than any 3rd-row SUV. Seriously -- it is ridiculous how much space I have for luggage, groceries, strollers, etc. It also probably has the auto sliding door, which seems unnecessary until you have a toddler on one hip and a bag of groceries on the other. And I don't know about the Pilot, but I know that with our van any of the six seats in the 2nd/3rd row can not only fold down independently but can also come out completely -- leaving multiple options for configurations for convenience, traveling, hauling furniture, etc.
Yesterday we walked out of Target and there was a Pilot parked next to our Sienna (the same color). We were actually confused for a second as to which car was ours -- the body shape was almost identical! Made me feel better about our purchase, since I was so hating the minivan shape.
We have a Pilot and love love love it! We don't use 3rd row that much, so it stays folded down and has TONS of room back there.
That being said, I'd think leather with a baby/toddler would be ideal so that you can avoid as many stains as possible. Plus the minivan auto door would be so convenient. I agree to go with your gut, but I don't think you could go wrong with either choice!
I think you will love having leather. Now that we have it, I don't want to ever have cloth again...ha!
I have very anti-minivan feelings, but they are irrational. LOL! So I would advise you to get the Odyssey. Everyone raves about them, and it sounds like you found a nice one!
Cargo space is really an issue in our SUV. It would be awesome without a carseat in back, but yeah...
We can fit just as much in the (surprisingly massive) trunk of our compact sedan.

We have a Pilot and love it, but we require a 4x4 to be able to even think about getting out of our driveway if it snows. So for now, in this house, Odyssey isn't an option for us.
That said, I love them. I sat in one while we were buying our Pilot and they are very, very nice. I know you drive the wheels off your cars too so the extra seating will pay off when you're hauling Jack's friends around when he's older.
Go for the Odyssey! You'll love the leather and those heated seats are sooooooo nice in the winter and I'm envious of the ability to climb in out of the rain easily after the door opened on its own for you. :-)
