NMS. They make a cute centerpiece when done well, but I don't think they're all that practical. Who wants to mess with having to unroll a bunch of diapers and store them loose?
I've seen a few VERY nice ones made with cloth diapers, but that of course takes some $$$. I went to a baby shower once where the host was giving the mom-to-be about 2 dozen hand-me-down Fuzzi-Bunz (the mom was cool with a used gift in this instance.) She arranged them into a really cute cake. I certainly wouldn't mind that kind of gift, LOL!
I have made two diaper cakes for friends, they seemed to love them. It got them through the first few weeks of diapers which I know they were grateful for!
Some of them are cute. I like them better when they don't have each individual diaper rolled up b/c I agree that it looks like a PITA to unroll all of them.
I went to a shower recently where someone had made 'cupcakes'. It was rolled up washcloths with baby socks holding them together. The person had stuck little cute toothpicks in them with rattles and such. They put them on a platter and wrapped the platter in celophane. It was the cutest thing ever and so original.

my best friend made one for me for my shower. It was 4 tiers and only 2 of them were diapers the other two were onsies and washcloths. It was so cute. If you wanted to make one you could do the inside onsies and only the outside in diapers as to not have a bunch of loose diapers, but I think it's a great idea!

My mom made smaller ones as table decorations for our shower. They were adorable. I think they are really cute and very easy to make on your own. I think she said she made all of them in a night. Those diapers were very useful in the first month or so.

I like them, but I wouldn't buy one. I think it would be more fun to make. I'd kill for one made with BGs....LOL!
