NBR: Recipes - Rotel

Last year a bunch of you were talking about a delicious recipe that used Rotel (not a product you can get in Canada), anyway I made it to the US this week and finally got some. Uh, now I can't remember what the recipe was for. Soup, maybe?

Help me out. Oh I will take any other recipes that you may have, I bought quite a few cans.

Rotel Cheese Dip

1 can Rotel

1lb Velveeta

1 pkg spicy sausage

Combine in a crockpot and enjoy!

Rotel Cauliflower

1 head of cauliflower

1 can of Rotel

Ritz Crackers, crushed

Pepper Jack Cheese, shredded

Steam cauliflower until about half way done (5 - 10 minutes). Break into chunks and place in a baking dish. Top with Rotel, crushed crackers, and cheese. Bake until bubbly.

I don't know what the recipe was, but I made this one this week and it was DELICIOUS. It is supposed to be for appetizers, but we had the wraps as dinner instead (with leftovers for lunch the next day). So good.
