Maybe it's the gringo in me but in this recipe and Jackie's garbanzo beans you use sofrito. What in the world is that?
Sofrito is a sauce you make to add flavor to a meal. Very common in Cuban kitchen! Very easy to make. Saute onions, add tomato sauce, green peppers, and a package of seasoning (i.e., Sason Accent - that is the brand). HTH!

Or you can do what I do - buy it from Publix. already made. Sofrito can be found either in the ethnic freezer section or by the olives and pimientos. :-)

I'm not sure if this is a cuban-style recipe but it's pretty much how I make small pink beans (minus the potatoes)
Saute EVOO, minced garlic, sofrito, 1/2 paket of sazon, 1/2 packet of ham seasoning. Add can of black beans 1/2 cup of water, stir, and simmer.
