Vegetarian mamas?

My DD currently is refusing my staple meal for her- which is whole grains/bean porridge and then some mix in fruits/veggies whatever.  I always felt so good about giving this to her because 1. she got a variety of whole grains 2. she got a variety of legumes everyday 3. I could mix in flax seeds etc.

I'm just looking for some other ideas I haven't thought of for her.  She likes to feed herself but usually only wants to put fruit, cheerios, some veggies in her mouth.  TIA

  • My DS loves this three bean chili I make (https://shine.yahoo.com/channel/food/recipes/three-bean-chili-536019/) or tofu chunks sauteed in a stir-fry sause.  I just serve his chili with a slotted spoon so he can pick up the beans.  Breakfast is usually oatmeal (I make it thick so he can pick it up, and I sometimes add flax seed) or french toast (bread dipped in raw egg and cooked in a skillet) with fruit.  He eats lots of chunks of veggies, fruits, cheese, etc for meals too.  And he loves every kind of bread.  Edamame is good too, but he likes the tofu better.

  • I'm a vegetarian. DS is not, but he eats a lot of veg meals. One of his favorites is a baked pasta dish. The main ingredients are whole wheat penne, spinach, diced tomatoes and garlic. I usually add whatever other veggies I have on hand--black olives, peppers, onions, etc. I bake it with a little shredded cheese on top. I usually cut the pasta, and he eats it on his own. Maybe you could try something like that. It's an easy way to get whole grains and veggies in. You could add tofu as well.
  • Oh, and how about veggie fried rice, or veggie burgers?  Does she not eat what you eat for dinner?

  • im raising my girls veggie and their two fave meals are tofu "chicken" nuggets, just bread the tofu and bake for 15 min at 350. or shepherds pie where i use mashed green lentils instead of ground beef and lots of spinach and carrots with whatever other veggies are laying around.

  • Thanks for all the ideas ladies!  I guess I have tried most of them and I do offer what I eat.  I just think I have a very light eater right now so I worry that I'm doing something wrong or she doesn't like what I offer.  I will just keep trying.
